Turkey is always the star of the dinner table around Thanksgiving and Christmas. The rest of the year, it’s often relegated to lunch meat. But at our house, we like to smoke turkey breasts throughout the year because it is so easy and always a crowd pleaser.
If you are like my family, you likely have more than one stop to celebrate this holiday, so having different items to choose from at each table is appreciated. Smoked turkey has always been the choice at my in-laws, whereas my side of the family always gone the more traditional route and served roasted turkey.
This year, my husband and I were selected to prepare the turkey. We have A Big Green Egg Smoker and love the opportunity to use it. While I do love a traditional roasted turkey, I don’t love getting up at the crack of dawn to start the cooking process in the oven. The best part about smoking the turkey is that is only on the smoker about 2 hours.
The most important part to any good turkey is to brine it for at least 24 hours. Brine is a salty water solution to which you can add any additional flavors you desire. Here is my recipe for the brine I made for two thawed, 8 lb turkey breasts:
1 gallon of water
1 cup Kosher Salt
½ cup brown sugar
Juice of 2 lemons
Bunch of fresh thyme
Simply bring this solution to a boil and then let cool completely before poring over the turkeys. I keep them in the brine for at least 24 hours.
The day we smoke the turkeys, I remove them from the brine and dry them off as much as possible. Just before we put the turkey breasts on to smoke, we shove as much softened butter as we can between the skin & meat, and sprinkle with salt and pepper all over.
Once you have your smoker to a temp of 320-325 degrees, it’s time to start smoking.
We fill a pan with apple juice and fresh thyme to sit under the turkey breasts in the smoker to add flavor and moisture while cooking.
The turkey breasts are placed skin side up and wood chips are added on top of the coals. More wood chips are added about every 30 minutes (or as needed) while checking the internal temp of the bird. You are looking for an internal temp of 160 degrees. Once you have reached this temp, remove the meat from the smoker and let rest for at least 20 minutes before carving.
