Customer Spotlight: Judy in Maryland

Meet Judy! She lives in Woodbine, Maryland and is a retired schoolteacher. She has eight Maggie Bags (so far) and has given four bags as gifts over the past few years.

Maggie Bags Customer Spotlight: Judy in Maryland

Maggie Bags: Being a teacher is one of the most important jobs ever. Tell us a little bit about your teaching career.
Judy: I taught English, speech and drama. I just loved working with kids of all age levels. The interpersonal interaction of teaching, the warmth, and getting to know students on a first name basis made it very rewarding. I always say that you don’t teach a subject, you teach people. And when you lose sight of that you don’t teach anything.

Maggie Bags: Now that you’re retired, how do you keep busy?
Judy: I love to travel. I have a son in Atlanta and a daughter in Houston. I went to France last year! I also like to make jewelry, knit, crochet, cook, read and volunteer at church.

Maggie Bags: How did you first hear about Maggie Bags?
Judy: I was at a craft show and noticed the lady next to me had a really neat purse. I asked her where she got it and she opened it up and I saw Maggie Bags on the purple lining. The rest is history!

Maggie Bags: You’ve said you’re a big Maggie Bags fan. What do you like about them?
Judy: To me they are the “Rolls Royce” of casual handbags. They are durable, stylish, never wear out, environmentally friendly, and every one has a touch of whimsy. I was in the grocery store recently and a young clerk saw my bag and asked if it was made of seatbelts. I said “yes” and then he called his friend to come look at them -“They’re made from seatbelts!” I guess you could say I’m a handbag nut and they’re my favorite.

Maggie Bags: Any pets?
Judy: Yes – I have a cat named Brutus. I got him at a shelter the day before they were going to put him down. He was only 11 oz. and wasn’t so healthy. I named him Brutus to boost his self-esteem and project a better future for him. I would cuddle him up next to my chin and fed him. He took off and now he is thriving! In my opinion, he’s the most beautiful cat in Maryland!

Maggie Bags: Sounds like you are a real pet lover. Do you participate in any pet-related charities?
Judy: I’ve worked with Tails of Hope before. They are a no-kill, non-profit animal rescue and adoption organization. During Katrina, they helped in moving dislocated pets through a vehicle convoy (New Orleans to Atlanta, Atlanta to Richmond, and so forth.) They help those that can no longer care for their animals by giving them foster homes until they can find a permanent family.

Maggie Bags: Next stop?
Judy: Probably heading to volunteer at church.

We’re Planting 10,000 Square Feet of Wildflowers

A few months ago we made a promise to you: Help us get to 10,000 Facebook likes and we’ll plant 10,000 square feet of wildflowers. We made it! We’re well-over 10,000 likes now and all because of your help and loyalty. We truly appreciate you!

As we surveyed where to plant the flowers, how to prepare the area, and other logistics, we realized that to be successful we would need to wait to plant these in the fall, when they have a better chance of being sown directly. Though we were a little bummed (we didn’t want to wait!), it’s more important that our endeavor to beautify an industrial area be successful than to be quick. Here we are surveying the area we intend to plant 10,000 square feet of wildflowers in with Allison Teeters from Keep Knoxville Beautiful. She was nice enough to stop by and consult with us on this beautification project.

Here is the area we are planning to plant the wildflowers in. Pictured are Allison Teeters from Keep Knoxville Beautiful and Callie Konane, Maggie Bags Creative Director.

We were so excited about planting these that we decided to take some of the seeds and get a jump start. We got two planter pots for our front entrance and have planted a few of the seeds there, in anticipation for our fall planting en masse.

Here are some pictures of our creative director and senior designer, Callie Konane, and me planting these. We wanted to show you the progress of the wildflowers just over the past two weeks!

Recipe: Simple Chicken & Dumplings

Growing up, Mom’s chicken and gravy was one of my favorite dishes and it was one of her most requested when the family gathered. Not long after I’d moved out on my own I decided to make some for myself. It was nearly done when I realized I had no potatoes to serve with it… but I had an overabundance of Bisquick on hand. And so Simple Chicken & Dumplings was born!

The recipe is a great dish to make for large groups… just do the dumplings about half hour before you’re ready to serve. I’ve prepared it in a Nesco to serve at several functions and it aways goes quickly. It can be easily adjusted to your family’s tastes and is a great way to stretch a small amount of chicken. The recipe calls for breasts, but you can easily substitute other boneless cuts or pieces.

Gather Your Supplies

  • Large Roaster Pan with Lid
  • Large Mixing Bowl
  • Frying Pan
  • Shallow Bowl or Plate for Dredging Chicken
  • Measuring Cups and Spoons
  • Cooking Utensils

Gather Your Ingredients

  • For Chicken
    • 1 and 1/2 Pounds Boneless Skinless Chicken Breast (about 6 pieces)
    • 1/2 Cup flour
    • 2 Tbs Poultry Seasoning (or use the entire recipe found here)
    • Oil for Frying (usually takes me about 1/4 to 1/2 cup)
  • For Gravy
    • 2- 26 Oz cans Condensed Cream of Chicken Soup
    • Water
  • For Dumplings
    • 4 Cups Bisquick Baking Mix (see note at bottom of post if you don’t have Bisquick)
    • 1/4 cup Chives (Parsley can be substituted, but it will lack some flavor. Adjust seasonings in gravy and flour mixture accordingly.)
    • 1 and 1/3 Cup Milk
  • Salt
  • Pepper

Preparation

Step 1: Preheat oven to 350°F. Put enough oil in frying pan to coat bottom about 1/4 inch deep. Preheat oil on stove at medium.

Step 2: Meanwhile, mix 1/2 cup flour with poultry seasoning, plus salt and pepper to taste, in shallow bowl or plate.

Step 3: Cut any unsavory bits from chicken breast and rinse clean. Cut each breast into 4 pieces. You can keep the breasts whole, but I find they are easier to serve if cut. Dredge each piece of chicken in flour mixture, coating completely. Set aside remaining flour mixture.

Step 4: Place chicken pieces into hot oil for 2 minutes. Flip each piece and fry another 2 minutes. You do not need to cook the chicken through, as it will cook in the oven later.

Step 5: While chicken is frying, open cans of cream of chicken soup and pour into roaster. Add one can of water for every can of condensed soup. Season to taste with salt and pepper. Mix well.

Step 6: As chicken finishes frying, place the pieces into the roaster. When you are done frying all the chicken, sprinkle the remaining flour onto the chicken soup mixture and then stir it in gently.

Step 7: Place roaster in the oven, uncovered, and cook at 350°F for 2 to 3 hours; stirring gently every half hour or so. It will be cooked and tasty at 2 hours, but cooking for the extra time will provide more tender chicken and a more complete flavor. Keep an eye on it if you go for the longer time, though, because you don’t want the gravy to dry up.

Step 8: When chicken is nearly done, mix together 4 cups Bisquick Mix with 1 and 1/3 cup until a soft dough forms and all lumps are gone. Stir in chives or parsley.

Step 9: Working quickly, pull roaster from oven and drop golf-ball-sized bits of dough into hot gravy mixture.

Step 10: Place back into the oven, uncovered, for 15 minutes.

Step 11: Now cover the roaster and return to the oven for 10 more minutes.

Step 12: It’s ready to serve! Scoop out a dumpling (or two or three) and a piece of chicken. Place on plate and top all with some gravy. We like to serve this with veggies and applesauce.
