Customer Spotlight: Meet Marisa!

Maggie Bags Customer Spotlight: Meet Marisa!We want to introduce you to one of our customers. Meet Marisa! She lives in Knoxville, Tennessee and is a full time mom and homeschool teacher. She also works part-time as a server at a local restaurant. She has three Maggie Bags (so far) and is looking forward to adding more to her collection.

Maggie Bags: How did you first hear about Maggie Bags?
Marisa: While I was working at the restaurant I saw two different customers who had Maggie Bags. I couldn’t believe that something so pretty was made from seatbelts.

Maggie Bags: Which bags do you have in your collection?
Marisa: I have a Small Messenger, Travel Cosmetic Bag, Small Cosmetic Bag and a key chain.

Maggie Bags: Why did you make the decision to home school? What do you see are the advantages?
Marisa: I have a son who’s 13 and a daughter who is 9. After my son’s first grade year I started looking at home schooling. I have a cousin who home schools and after researching it for a long time I decided “I can do this.” The advantages to homeschooling are endless. We are not tied down to a school desk and can explore education more broadly and creatively. I can teach them God’s word and practical knowledge they will need as they grow up.

Maggie Bags: You’re busy being a mom and homeschooling, but outside of that what is your favorite pastime?
Marisa: I really enjoy cooking. I learned from my mother-in-law, who is from Germany. Our favorite family dish is probably spaghetti, but I’ve been making a new chicken pot pie recipe that uses a crust recipe my mother-in-law taught me. My son really loves it!

Maggie Bags: Tell us a little about the pictures you sent us.
Marisa: We just starting taking pics with animals, then with butterflies, then the rainbow was outside my back door. I have had about 10 rainbows this summer in the evening in the very same spot!

Marisa: Well, I’m looking forward to picking out my next Maggie Bag! I think I’m going to go with the Campus Tote in Ultraviolet.

Marisa’s Chicken Pot Pie Crust

Marisa makes her own pie crust and says it works well not only for chicken pot pie, but for pumpkin, blackberry or apple pie.

Crust (makes 2 crusts)

  • 2 cup flour
  • ⅔ cup melted butter
  • Dash of salt
  • 1-2 tbsp of water to start

Directions

  1. Preheat oven to 375°.
  2. Mix flour and salt. Cut in margarine.
  3. Sprinkle with water and mix with fork.
  4. Press 1/2 of crust mixture into pie pan and bake for 7 minutes.

For the filling, Marisa likes Pampered Chef’s Easy Chicken Pot Pie recipe. Since the crust makes double, use 1/2 of the crust mixture for the bottom crust and 1/2 for the top of the pot pie crust.

Waste Free Lunches

This is a big year for me with all three kiddos going to school every day. Woo hoo! However, that means I’m packing three lunches a day for 180 school days a year. Oh my! My children haven’t shown a desire to eat cafeteria food yet, and frankly I prefer knowing and monitoring what they eat. I also like that I can make their lunches completely waste-free.

My venture into waste-free lunches began four years ago when I purchased Laptop Lunches. I have no tie to the company other than being a fan. They are BPA-free, safe in the microwave and dishwasher, and made in the USA. I can attest that they stand up to daily use, as we use them throughout the summer too. Four years and counting. I keep an extra one packed with non-refrigerated snacks in the car at all times. Boy, has that been a lifesaver.

Though my kids are lured by pre-packaged choices, I rarely put anything in their lunch they have to throw away. What’s leftover can be composted when they get home. Drinking water in their stainless steel water bottles cuts out the waste and excess sugar of juice boxes. Another plus is that everything fits nicely in most lunch carriers so that their lunchbox case can match their backpacks. You know that matters.

The individual containers are ideal for kids who “don’t want their food touching.” They can heat up pasta in one container and eat chilled grapes in another. The smallest container with a lid is ideal for ketchup, tomato sauce, or ranch dressing to ensure they eat their veggies. I’ve also used that for M&Ms; visually seeing their dessert as a smaller portion of their lunch helps drill home that message of correct proportions.

Now I understand that trying to come up with lunch ideas they will actually eat can be a frustrating process. I know! My friend Melissa Cox, aka Frugalissa Finds, has some great tips for lunches here and here. My favorite is putting the kids in charge of packing their own boxes the night before. You set the guidelines; they make the choice. I got some great ideas from these visuals of lunch options. I think I’ll try the popcorn, edamame, and cheese cubes tomorrow. Laptop Lunches also come with a book with lots of ideas.

If you are just getting started with packing lunches or snacks this way, there are many products on the market. I’ve had good luck ordering through Reuseit, which has competitive prices, good inventory, and a commitment to donating 1% of sales to green non-profits. There’s also a nice video on their home page showcasing reusable products for adult lunches. My hubby packs his lunch everyday too.

1. Repackaging Foods for Long-Term Storage - Click through this pin for a list of 20+ items that you can keep long-term but that need to be repackaged.
2. Put Citrus Peels in Your Mulch - This pin claims that if you cut up orange peels and put in your mulch it will keep animals away from your yard and garden. I couldn’t verify this by clicking through the pin, but I did find this article that suggests this works.
3. Pantry Counter - I think most of us have the issue of too many appliances and not enough counter space. And typically you don’t need to use the bread machine everyday. This clever idea of putting a counter in your pantry gives you a great way to store these.
4. What You Can & Can’t Freeze - Great pin but I had trouble getting to the website so I found it for you here. This blogger tells you what she freezes and how which is a huge help!
