Foodie Friday: Cheesy Ranch Jalapeno Stuffed Chicken

TGIF! It’s Friday and you know what that means…Foodie Friday time! In today’s post we’re bringing you a version of jalapeno popper stuffed chicken that is to die for. It’s basically a chicken cutlet stuffed with a deconstructed jalapeno popper with the added yummies of bacon and ranch dressing. This quick dinner entree may quickly become one of your favorites, but beware - it’s addictive!

Cheesy Ranch Jalapeno Stuffed Chicken

Ingredients

  • 4-6 chicken cutlets or two chicken breasts sliced in half (horizontally)
  • 3 jalapenos, chopped (remove seeds for less heat)
  • 8 oz. cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 3 slices bacon, cooked and crumbled
  • 1/2 packet powdered ranch dressing mix
  • salt and pepper

Instructions

1. Preheat oven to 450°. Mix together cream cheese, cheddar cheese and ranch dressing.

 

 

 

 

2. Add in chopped jalapenos and crumbled bacon. Mix well.

 

 

 

 

3. Tenderize chicken to make it flatter. The flatter it is, the easier it is to roll up.

4. Spoon cream cheese mixture into center of chicken piece, roll up and secure with toothpicks. Repeat with all chicken pieces.

 

 

 

5. Place on cookie sheet (I used parchment paper) and bake for 20 minutes.

 

I thought that the cream cheese mixture would ooze out the sides when it baked but instead the high temperature kind of gelled the mixture together quickly and it pretty much stayed inside the chicken roll. My husband isn’t usually a big fan of leftovers but he took all the remaining chicken for lunch the next day. This recipe is a keeper!

Behind the Scenes: Maggie Bags Congratulates 5 Graduating Seniors

It’s been a busy spring for several of of Adrian’s Inc. staff. Adrian’s, the parent company of Maggie Bags, is also home to TN Webbing and Bednet. We have five employees who are proud parents to seniors graduating from high school and they are ready to start their adult lives. In this behind the scenes edition, we’ll meet these graduates who are part of Maggie Bags’ extended family.

JUSTIN

Justin is the son of Maggie Bags’ senior marketing director, Kerri Karel.

Kerri says “Justin is super smart and very creative. He has been awarded multiple scholarships for, and will be attending, Savannah College of Art and Design and plans to be a filmmaker. He has won numerous local, regional and national awards for original artwork and photography. It is such a blessing to have a son who knows who he is and where he wants to go in life.”

NOAH

Noah is the son of Missy Shealy, Adrian’s Inc. operations assistant.

Missy told us, “Noah recently graduated from Carter High School in Knoxville with plans to attend Pellissippi State Community College in the fall. We are very proud of Noah and all of his accomplishments. He has already shown outstanding work ethics. We can’t wait to see what the future holds for the son that God has blessed us with.”

PARKER

Parker, son of Steve Dew, our president, is also ready for his leap into the great big world and graduated with honors as a member of the National Honor Society at Berean Christian Academy.

Steve says “Parker has been such a blessing in our lives. He has brought us so much joy and we are so proud of all he has accomplished in his 18 years. But above all the awards, good grades, hard work (part time job since 15 years old), It’s his kind heart and gentle spirit that we are most proud of. As difficult as it is to let him grow up, we are so excited to see the wonderful life God has in store for him.” Parker will be attending The University of the South this fall.

 

REED

Reed, son of Amy Keener, TN Webbing customer service lead, also has a bright future ahead of him.

Amy told us “Reed graduated from Carter High School in Knoxville and plans to attend Pellissippi State Community College in the fall. He hasn’t decided yet on what he would like to major in but his interests range from a bachelor’s degree in wildlife management to sports turf management. We are so proud of Reed’s accomplishments and we look forward to seeing what the future holds for him!”

TANNER

Tanner, son of Greg Hill, Bednet’s freight product specialist, will be heading to college as well.

Greg’s gave us this message for Tanner, “Tanner Hill, It has been a privilege to be his Dad these last 18 years.” He also said, “His plans are to pursue a degree in communications, but, since he isn’t 100% sure of his degree choice, he will be enrolling at Pellissippi State Community College this fall. He has also considered joining the Air Force {I think he may in the future}. He was a 4 year varsity letterman in basketball in high school.”

We want to congratulate each of these five boys who are becoming men before our eyes. We wish them the best of luck in the future!

Five Items for Summer Sun Safety

To start - it’s very important to remember that the sun is actually out all year long (I know, we haven’t seen too much of Mr. Sun this long long winter, but his rays can still damage our skin in the depths of December!).

Still… since the weather is getting warmer, we’ll be spending more time outdoors, which is why summer is typically the time we talk about sun safety.

Here’s the gear you should stock up on for your family before heading out of doors.

TIP: Get multiples of these items and pack “grab and go” bags so you will always be ready to keep your family safe!

Sun protective items and sun safety tips:

  1. Hats - wide brimmed, baseball, straw… hats are great quick fixes that keep the sun out of your eyes and off your face - both highly sensitive to sun damage.
  2. Sunglasses - everyone in the family should be wearing sunglasses out of doors, and I’d recommend year-round too. You should definitely have sunglasses for kids! Children’s eyes are twice as sensitive as adults to sun damage!
  3. Safe sunscreen - I recommend a zinc-oxide based “natural” sunscreen using “non-nano” particles (that means not the little particles that you can potentially breath in).
  4. Sun protective clothing - there’s no possible way to cover everything in sunscreen. If you have small children you know the truth of this. So cover up large areas of the body quickly, easily, and fashionably with sun protective clothing. So many items are on the market now from cute sundresses, to capris, hats, even arm sleeves!
  5. A watch - Okay this is not going to actually protect you against sun damage, but you really should be mindful of how much time you are out of doors. Take breaks, stay in shaded areas where possible, and be aware that from 10-2 is usually the time where the sun’s rays are harshest.

Remember, pack a bag or two with these essential items, and avoid sunburn all summer long! Don’t forget to drink lots of water, as dehydration can be a side-effect of too much sun exposure!
