Foodie Friday: Creamy Parmesan Chicken and Mushrooms

I’m a planner at heart, but some nights I have no clue what I’ll be cooking for supper. It’s these nights that lead to many of our Foodie Friday recipes. “Necessity is the mother of invention” as the old English proverb says. When I looked in my fridge a few days ago at supper time, all I had was a rotisserie chicken, mushrooms and parmesan. Since my family isn’t too keen on “plain old” rotisserie chicken, I knew I needed to dress it up. This recipe for Creamy Parmesan Chicken and Mushrooms went over so well that it will become a regular in my household!

The recipe is basically a Béchamel sauce with chicken and mushrooms mixed in. (If I’d had them, I would have added in both onions and green peas.) For the starch portion, you can use rice or pasta. I used brown rice with quinoa because that’s what I had on hand. This sauce turned out to be so rich and creamy that I can promise you won’t be disappointed!

Ingredients

  • 10 mushrooms, sliced
  • 2 cloves garlic
  • 2 tbsp butter
  • 1.5 tbsp all purpose flour
  • 1 cup milk
  • 1 to 1.5 cups cooked chicken, diced
  • 1/2 cup Parmesan, shredded
  • 1 tsp thyme
  • salt and pepper to taste

Directions

1. Spray pan with olive or vegetable oil and saute mushrooms and garlic for 3 minutes or until tender. Add in the flour and mix thoroughly, cooking another 1-2 minutes.

2. Add in milk and cook on high until the sauce becomes bubbly, then immediately turn down to low. Let simmer for 5 minutes then add in the chicken and stir.

3. Add in the thyme and Parmesan cheese and mix until cheese is melted. Serve over rice or pasta.

If you have more than two adults eating you’ll probably want to double the recipe. And, as always, use real Parmesan cheese and not that powdered stuff in a canister.

7 Must-Haves for your Day Trip Bag!

Fall is here with crisp air, falling leaves, pumpkin patches and apple orchards. It’s the perfect time for weekend day trips to farms, walking around big cities, or just exploring your own neighborhood.

Being out of the house all day requires a few items to stay comfortable! Here are my top picks to pack in your day trip bag!

  • Sunglasses - hopefully you’re picking a day that’s nice and sunny, so don’t forget to bring sunglasses! Fall sun is actually lower on the horizon, so it can get in your eyes more than at other times of the year.
  • Wallet - bring a zippered wallet that can double as a clutch, that way if you want to just duck in and out of stores, you don’t have to haul a large bag around.
  • Facial Wipes - If you’re out for long, you may find yourself a little hot and dusty - some autumn days are rather warm! Bring along a pack of facial wipes to cool down and clean up between meals or stops.
  • Extra t-shirt - because fall weather can be tricky, I’d recommend tucking an extra t-shirt (long-sleeved) into your bag. If you get sweaty, it’s easy to change shirts in a bathroom. If you feel chilly, just pop the shirt under or over what you’re already wearing!
  • Cell Phone - You’ll definitely want a spot for your cell phone and charger in your bag. With apps like GPS, pedometers, and payment and gift card services, it’s an essential traveler’s tool!
  • Lip Balm - when I spend much time outdoors or even just shopping, I find myself rather dry. I like to drink lots of water when I’m out, and apply lip balm regularly to keep my lips from chapping.
  • Hat - find a warm brimmed hat that can both protect eyes from the sun, and keep the chill away. Plus, it’s stylish to wear hats in the fall!
