I have been on a kale kick lately. My four-year old however is boycotting green vegetables out of the blue, so I have been trying various green veggies in dishes he already loves to try to add a bit more nutrients into his diet. He is eating vegetables but cucumbers, carrots and corn are not enough! (I hope this is a short phase as he has always been a great vegetable eater.) Anyways, I tried a version of my homemade creamy Alfredo shrimp and added kale in the mix. It turned out delicious and he got the added power house green kale too!

Creamy Alfredo Shrimp with Kale

Ingredients

  • 1lb of Pasta (Fettuccine, Orzo or Spaghetti)
  • 1lb of Peeled Devine Shrimp ( I have used both uncooked and cooked)
  • 1 Cup of Parmesan Reggiano or Parmesan Cheese, Shredded
  • 1 Cup of Cream
  • 1/2 Cup of Water
  • 1 Bunch of Kale, Chopped
  • 1 Tablespoon of Olive Oil
  • 1 Clove of Garlic, Minced
  • Salt & Pepper to Taste

Directions

In a large stockpot, bring your water to a rolling boil. Add 1 tablespoon of salt and then cook your pasta al dente. While your water is boiling cook your shrimp, if they are not already. At medium-low heat, add in the olive oil and cook your garlic 3-4 minutes. Add in the cream and water. Simmer and continue to cook until reduced by about half, about 5 minutes. Add about 3/4 cup of cheese to the sauce. Stir and continue to simmer 2-3 minutes. Add your shrimp back into the sauce along with the kale. Toss the kale until just wilted, do your best to not over cook. Remove your sauce from heat and toss with your pasta. Garnish with the remaining cheese and enjoy! Depending on your crowd this should serve 4-6 people. You can also lighten the meal by serving over spaghetti squash in place of the pasta.
